What's inside The bar has two main components. The outer shell is Zotter's 70% dark chocolate, made bean-to-bar in their Austrian factory. Inside sits a dark chocolate mousse made with 80% cocoa content chocolate, butter, invert sugar syrup, and sunflower oil. The mousse is soft and melts quickly on the tongue, releasing a concentrated, deep cocoa flavour. The ingredient list is unusually short for a hand-scooped bar: cocoa mass, cane sugar, cocoa butter, butter, invert sugar syrup, milk, sunflower oil, glucose syrup, salt, and Bird's Eye chilli. The Bird's Eye chilli is worth mentioning because it is easy to miss on the ingredient list but it does contribute to the overall flavour. It is not enough to register as heat in the conventional sense. Instead, it creates a faint warmth in the finish that makes the cocoa taste fuller and longer-lasting. If you have tried high-percentage dark chocolate that seemed to have a natural "glow" at the back of the palate, this is a similar effect, just nudged along deliberately. About Zotter's hand-scooped chocolate Zotter is a bean-to-bar chocolate maker based in Riegersburg, Austria. They roast, grind, conche, and temper all their chocolate in-house. The term "hand-scooped" refers to their production method: fillings are layered by hand onto long production lanes, one on top of the other, then coated and cut into bars.
